Got the Super Bowl munchies? Just wing it

It’s not too late to get some tasty snacks ready for the big game

ALBANY — It’s Super Bowl Sunday and you’re looking for a quick snack fix for the big game. Joe Kem Lacey of Moultrie, known for his barbecuing and his Joe Kem’s barbecue sauces, has some coverage ideas if you want some tasty chicken wings to share with your guests.

Lacey and his son, Jay, are getting their products — a mild and a spicy sauce, plus now a rub — into more stores in Southwest Georgia these days. It’s been a growing business from the father-and-son team. In fact, Jay Lacey came up with the recipe for the rub that they’re now marketing.

“We started doing it just as a hobby,” Kem Lacey said.

For many, the Super Bowl has become a party tradition, planned out and prepared for. But others find themselves getting up on Super Bowl Sunday after a busy week at work, wishing they could throw together something special to munch on before kickoff.

Lacey’s suggestion? Just wing it on the grill.

First, he said, you’ll need some chicken wings and barbecue rub.

“Take the chicken wings and put them in a bowl,” he said. “Sprinkle it on moderately.”

Toss the wings, he said, “Then it’s ready to go onto the grill.”

The chicken needs to reach a temperature of 160 degrees.

“On a charcoal grill, you probably need to cook them 30-40 minutes,” Lacey said.

Once the wings are done, he said, brush on barbecue sauce on both sides.

“Let it sit there about five more minutes and then its ready to eat,” he said.

Looking for something to go with them besides chips? Barbecue baked beans can be fixed quickly.

“If you want to do baked beans,” Lacey said, “take the can of beans, pour a small amount of barbecue sauce in and just heat them up.”

Ribs take a little longer, but they’re doable if you start early enough.

“I always take an oyster knife and skin the ribs first,” Lacey said.

After putting barbecue rub on the ribs, cook them about four hours at 200 degrees.

“Put sauce on them right before you’re done,” he said. “They’re ready to eat. Then you just pop a top, sit down and watch the bowl.”
