March 23
China East — Po’s Sub Sandwiches, 1719 E. Oglethorpe Blvd.
Score: 88, Grade: B
Violations: Observed employees single-service cup without a secure lid and not stored in a designated area separate from food preparation. PIC placed the cup in the trash can. New violation. Observed the interior of the prep top coolers, interior of the refrigerators and freezer need to be cleaned. Discussed the frequency of cleaning with the PIC. New violation. Observed plumbing (pipe) leaking at the three-compartment sink. PIC will have the plumbing fixed. New violation; correct by April 24. Observed the Dumpster area needed to be cleaned. PIC had the Dumpster area cleaned. Repeat violation.
Deerfield Windsor School/Upper Campus, 2500 Nottingham Way

Waffle House, 103 Logan Court
Score: 95, Grade: A
Violations: Observed ice in the walk-in cooler that was not stored 6 inches above the floor. PIC moved the ice. Corrected on-site; new violation. Observed cloths for wiping counters and other equipment that were not stored in chemical sanitizer solution between uses. PIC moved cloths to sanitizer. Corrected on-site; repeat violation. Observed the outside receptacle was not closed with tightly fitting lids. Discussed keeping Dumpster lids closed with PIC. New violation.

Violations: Observed cloths in use for wiping counter and other equipment that were not held between uses in a chemical sanitizer solution at the proper strength. Employee placed cloths in chemical sanitizer at 100 PPM. Corrected on-site; repeat violation. Observed the sink designated for washing fruits and vegetables only being used to store single-service items. PIC removed the items. Corrected on-site; new violation. Observed utensils above the three-compartment sink that were stacked directly on each other while wet so that air drying was not encouraged. Discussed proper stacking methods with the PIC. New violation. Observed outside Dumpster and grease trap were not covered with tightly fitting lids. PIC placed lids on receptacles. Corrected on-site; new violation.
Wingate Inn/Food Service, 2735 Dawson Road
Score: 91, Grade: A
Violations: Observed that the establishment does not have in its employ a Certified Food Safety Manager to ensure food safety is being managed due to the previous CFSM no longer being employed with the facility. Repeat violation; correct by April 21. Observed employee handling food that was not wearing a disposable or easily cleanable hair net or other restraint. Discussed wearing hair restraints with PIC. New violation.
Remarks: PIC stated that the CFSM course was taken by the manager, but the score has not been received. I advised the PIC that proof of a passing score will need to be provided to Environmental Health within 30 days.

Score: 88, Grade: B
Violations: Milk (44F) cold held above 41 degrees Fahrenheit. EHS instructed PIC to close milk cooler lid. New violation. Mashed potatoes (132F) hot held below 135 degrees Fahrenheit. PIC reheated foods to 165F for hot holding. Corrected on-site; new violation. No sneeze guard present on consumer self service line. New violation.
Remarks: Items to address before next inspection: Water interruption plan, light shield repair, employee drinks, digital thermometer, plumbing leaks, paint ceiling, vegetable prep sink splash guard, new construction plan review, residential equipment, decision guide.
