Score: 95, Grade: A

Violations: Observed the fume hood with an accumulation of grease. Discussed frequency of cleaning with the PIC. New Violation. Observed the fans and ceiling in the walk-in-cooler with an accumulation of dust. Discussed frequency of cleaning with the PIC. New Violation.

Feb. 13

AMC Albany 16, 2823 Nottingham Way

Score: 97, Grade: A

Violation: Observed the hand sinks and 3 compartment sinks in the kitchen area were not supplied with hot water under pressure. PIC to have hot water restored by plumber. PIC stated that he is looking into having an individual hot water heater for downstairs and a heating element for upstairs to be purchased and placed nearer the sinks for better hot water availability. Repeat Violation. Correct by Feb. 27.

Remarks: Discussed keeping internal thermometers in coolers and freezers within view. Discussed proper storage of single use cups.

Chipotle Mexican Grill, 2630 Dawson Road Suite 1

Score: 96, Grade: A

Violation: Observed no consumer advisory on menus. PIC stated that Chipotle does cook steak to only 140 degrees Fahrenheit if customer requests and that they verbally discuss the consumer advisory with the customer. PIC to have company place consumer advisory on menus within 2 weeks. New Violation. Correct by Feb. 27.

Remarks: Discussed keeping cooler and freezer internal thermometers within view.

Score: 91, Grade: A

Violation: Observed TCS foods that were not being maintained at 41 degrees Fahrenheit or below in combination prep-top/reach in cooler located in the front of the kitchen and then smaller prep-top cooler positioned nearby. See Temperature log. Temperatures were shown to PIC and discussed with PIC. He found similar temperature readings with his thermometer also. PIC to discard potentially hazardous food items and call for servicing/repair of above coolers mentioned. New Violation. Correct by March 1.

Remarks: Discussed keeping thermometers in coolers and freezers within view. CSFM stated that a new larger dumpster has been ordered to replace the two smaller crowded dumpsters. Discussed routine testing of QAC sanitizer mixture in sanitizing buckets with the QAC test strips on hand.

Violation: Observed fume hood up over the fryer not clean to sight and touch. Discussed with CFSM. CFSM to have fume hood cleaned. New Violation. Correct by Feb. 22.

Remarks: Discussed keeping thermometers inside coolers and freezers within view. Discussed posting of new CFSM certificate. Few chlorine test strips given by EH until locating or purchasing new chlorine test strip container. Discussed service/maintenance of freezer. Discussed need for restaurant grade sanitizing buckets for wiping cloths. Discussed proper storage of single service utensils when not individually wrapped. Discussed proper storing of mops. “Time As A Public Health Control” sheet discussed and given to CFSM.
