RECIPE: German Cucumber Salad, a.k.a. Gurken Salat

We loved the method for making this German cucumber salad. Slicing the cucumber very thin lets the salt draw out the natural juices. The dressing that is added is tangy, but the little bit of sugar helps to balance the flavors. Dill weed is a wonderful addition and elevates the flavors in this cucumber salad. A refreshing salad for summer.

Ingredients

  • 1 lg cucumber, peeled and thinly sliced
  • 1-2 pinch salt
  • 3 Tbsp apple cider vinegar
  • 1 Tbsp canola oil
  • 1 tsp sugar
  • 2 Tbsp water (optional)
  • 1/8 tsp dill weed
