RECIPE: Pumpkin Chocolate Chunk Cookies

We couldn’t wait to try this cookie as soon as it came out of the oven. All the great tastes of fall are in this cookie. It’s a fluffy, moist cake-like pumpkin cookie that’s full of chocolate chunks. They’re not strongly pumpkin spice flavor. Just the spices that are mixed in with the pumpkin pie filling. It’s a great balance of flavor. And they’re easy to make – a tasty recipe for the family to make together.

Ingredients

  • 1 c canned pumpkin pie filling
  • 1 c sugar
  • 1/2 c canola oil
  • 1 egg
  • 2 c all-purpose flour
  • 2 tsp baking powder
  • 1 c semi-sweet chocolate chunks
  • 1 tsp baking soda dissolved in 1 tsp milk
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp salt
