RECIPE: Turkey Croquettes (After Thanksgiving Day Treat)

One taste of these turkey croquettes and you will want to make sure you have turkey leftovers. Fresh lime and cilantro add not only flavor but a real freshness to the croquettes. Jalapenos add a bit of heat. Those three ingredients alone give these a Southwest feel. Once fried, they’re crunchy on the outside. Baking them in the oven warms them thoroughly. A great way to reinvent Thanksgiving leftovers. Serve with your favorite condiment.

Ingredients

  • 2 c turkey, diced
  • 2 Tbsp fresh cilantro, chopped
  • 1/2 tsp fresh chives, chopped
  • 1 fresh red or green chili (serrano or jalapeno)
  • 1 c bread crumbs, fresh
  • grated zest of 1 lime
  • 2 Tbsp fresh lime juice
  • salt and pepper
  • 3 Tbsp heavy cream or turkey gravy
  • 1 lg egg, separated
  • 1 tsp cold water
  • 1/4 c fine yellow corn meal
  • 1/4 c olive oil
