Violations: Observed TCS foods that were not being maintained at 41 degrees Fahrenheit or below in combination prep-top/reach-in cooler located in the front of the kitchen. See temperature log. Temperatures were shown to CFSM and discussed with him. CFSM had employee discard potentially hazardous food items and work order to Alltech for servicing/repair of above cooler. Corrected On-Site. New Violation. Remarks: +/- 3 degrees Fahrenheit allowed for thermometer accuracy. CFSM to have walk-in cooler outside dial repaired/replaced. Inside thermometer present.
