CRACKER BARREL, 1114 N. Westover Blvd.

Violation: Observed two reach-in freezers not clean to sight and touch. Discussed this and showed freezers to manager, who will develop routine defrost/cleaning/sanitizing schedule for staff to adhere to for the reach-in freezers and remind staff to keep food containers covered when not in use. Corrected On-Site. New Violation. Remarks: +/- 2 degrees Fahrenheit allowed for thermometer accuracy.

Violations: Observed interior of ice machine chute not clean to sight and touch with an alcohol prep pad. Discussed with new manager, who is to ensure ice machine is cleaned/sanitized and ice machine chute is cleaned/sanitized routinely as well as ice scooper is to remain stored in the ice handle up. Observed outside waste receptacle not kept covered with tight-fitting doors. PIC will keep Dumpster door closed when not in use. New Violation. Remarks: Discussed walk-in cooler lighting.

Correct by June 20. Observed deli meat, tomatoes, cheese and lettuce stored at 48 degrees F in reach-in cooler behind front counter. Manager corrected violation by discarding food. Corrected On-Site. New Violation. Remarks: Manager stated reach-in cooler would be repaired next day. In the meantime, all food will be stored in walk-in cooler.
