Remarks: Manager emptied the sanitizer buckets and refilled them with proper concentration of QAC (quaternary ammonium compound) sanitizer as evidenced by QAC test strip of 200 ppm. She agreed to educate staff to test the sanitizer buckets routinely. Manager placed the food container in the freezer 6 inches off the floor and agreed to educate staff. Mechanical dishwasher staff notified by Ms. Rodriguez and EHS (Environmental Health Services) to stack wet dishes in a manner to encourage air drying. Ms. Rodriguez agreed to educate staff. Corrected on site. +/- 3 degrees Fahrenheit allowed for thermometer accuracy.
