Dec. 28

BJ’S II, 2004 E. Oglethorpe Blvd.

Score: 85

Violations: Observed TCS food not protected from cross-contamination by storing in covered containers. PIC covered the unprotected food. Repeat Violation. Observed interior of oven not clean to sight and touch. PIC will have oven washed and sanitized. New Violation. Observed TCS food not maintained at 135 degrees Fahrenheit or above. PIC discarded TCS food (white rice and mashed potatoes). Corrected On-Site. New Violation. Observed cole slaw above 41 degrees Fahrenheit when removed from cold-holding temperature and placed at the bar. PIC discarded cole slaw. Corrected On-Site. New Violation.

Remarks: Discussed labeling discard times for bar when using time as a procedure to hold. Discussed dry storage area ceiling tile.

Violations: Observed nonfood-contact surfaces of equipment not kept free of an accumulation of food residue and other debris. PIC will have holding units cleaned. New Violation. Observed floor tile near fryers in need of repair. PIC will have floor tile repaired. New Violation.

PIC brought QAC sanitizer solution up to the proper concentration. Corrected On-Site. New Violation. Observed in-use utensils stored in food with their handles in contact with the food. PIC placed utensils upright. Corrected On-Site. New Violation.
