Remarks: Discussed proper storage of raw meats based on minimum internal cooking temperatures rather than meat types. Discussed proper sanitizer concentrations for wipe cloth storage containers and how to prepare.

Violation: Observed cook wearing a bracelet on her arm while cooking food. Manager had cook remove bracelet. Corrected On-Site. New Violation.

Remarks: Discussed ice machine; complaint – washing, rinsing, sanitizing utensils between uses, when there is an interruption in use or every 4 hours. No bare hand contact with ready to eat foods.

Pizza Hut, 615 E. Franklin St.

Score: 96, Grade: A

Violations: Observed salad bar refrigeration unit frozen and unable to maintain temperatures at levels to keep potentially hazardous foods at 41 degrees F or below. New Violation. Observed covers of fans in walk-in cooler dusty and in need of cleaning. New Violation. Observed light cover in walk-in cooler broken and bulbs exposed. New Violation.

Remarks: Manager moved potentially hazardous food items from the salad bar to the walk-in cooler to maintain temperatures. She will put a work order in to have the cooler repaired. She will keep a check on temperatures and move the items to another cooler whenever temperatures are not holding properly.
