Violations: Observed fryers and fume hood not clean to sight and touch. PIC will have food contact equipment cleaned. New violation. Observed no temperature measuring device in the cold hold unit. PIC will have a thermometer placed in the reach in cooler. (Base of operations) New violation.

Remarks: +/- 3 degrees Fahrenheit allowed for thermometer accuracy. Discussed dish storage.

PIC was informed to get the proper certification and did not do so. PIC has another 60 days to get proper certification. New violation. Observed raw chicken and beef being stored over RTE food in prep top cooler. New violation. Observed several food items being stored in walk in cooler with no protection from contamination. New violation. Observed cooked chicken and beef being hot held in steam table at temps under 135 degrees. New violation. Observed no date marking on any food items. New violation.
