Violations: Observed no temperature measuring devices in reach-in coolers. PIC will place thermometers in reach-in coolers. New Violation. Observed food unnecessary to the operation of the establishment stored in the reach-in cooler. PIC will have food items removed from premises. New Violation.

THAI KITCHEN, 2216 Palmyra Road

Score: 95

Violations: Observed no policy to advise employees of compliance and reporting responsibilities for foodborne illnesses. Will bring the PIC another copy of the employee health policy. New Violation. Observed an employee’s personal drink was not in a single-service cup secured with a tightly fitting lid and straw. Discussed proper employee drink storage. New Violation. Observed no procedure for clean-up of vomit/fecal incidents onto surfaces in the facility. Will bring PIC another copy of the vomit/fecal incident clean-up procedure. New Violation. Observed scooping utensils that were stored in standing water that was not kept at 135 degrees Fahrenheit or above. PIC removed water. Corrected On-Site. New Violation. Observed utensil for scooping rice in bulk bin that did not have a handle that can be stored above the top of the food. PIC had another scoop with a handle that can be used. Corrected On-Site. New Violation.

Remarks: Discussed hierarchy of storage. Discussed wiping cloth storage.

Violations: Observed knife and spatula stored in a manner that would not protect from food/lip contact. Discussed with PIC. PIC to have utensils as well as container that they are stored in washed, rinsed, sanitized and air-dried. Utensils will be stored in handle-up position. PIC to educate staff. New Violation. Correct by Jan. 18. Observed large reach-in cooler and freezer open and close properly but part of their handles are broken. Tape was being used on the reach-in cooler handle. Discussed with PIC. PIC agreed to notify the interim manager. New Violation. Correct by Feb. 18.

Remarks: +/- 3 degrees Fahrenheit allowed for thermometer accuracy. Discussed hand sink. Discussed ice scoop. EH provided few chlorine test strips until PIC can have new container of test strips purchased.
