Score: 98, Grade: A
Violations: Observed utensils at the three-compartment sink directly stacked while wet, so that air drying was not encouraged. PIC had employee restack the utensils and trained employee on proper stacking methods; corrected on-site, repeat violation.
Remarks: Plus/minus 3 degrees Fahrenheit allowed for thermometer accuracy; discussed restroom receptacles.

Violations: Observed interior of reach-in cooler needs cleaning; PIC will have interior of reach-in cooler cleaned and sanitized; new violation. Observed pest activity. PIC will have certified pest controller come and spray facility; repeat violation.
Remarks: Discussed thermometers.

Score: 78, Grade: C
Violations: Observed the PIC was unaware of proper method to rapidly cool time/temperature control Zitti that are not held or not for consumption within four hours. Observed the PIC was unaware of the responsibility to report information about health and activities as they are related to diseases that are transmissible through food; new violation. Observed raw chicken, hot dogs and raw beef not arranged in the freezer to prevent cross contamination; corrected on-site, new violation. Observed cold holding potentially hazardous foods above 41 degrees Fahrenheit. PIC discarded all of the items; corrected on-site, new violation.
Remarks: Plus/minus 3 degrees Fahrenheit allowed for thermometer accuracy. Due to the score, the restaurant will be re-inspected on Jan. 27.

Score: 93, Grade: A
Violations: Observed no paper towels available in the men’s restroom. PIC will place paper towel in the restroom; new violation. Observed no hot water at the three-compartment sink behind the bar. PIC will have the knob for the hot water replaced; new violation. Observed no lid on the trashcan in the women’s restroom. PIC will replace the lid; new violation.
Remarks: Plus/minus 2 degrees Fahrenheit allowed for thermometer accuracy.

Score: 87, Grade: B
Violations: Food employee failed to wash hands between handling raw pork bacon and hamburger bun. PIC instructed employee to discard bun, wash hands and reglove before continuing work; corrected on-site, new violation. Fish scales present in vegetable prep sink. PIC washed, rinsed and sanitized vegetable prep sink; corrected on-site, repeat violation.
Remarks: Items to address before next inspection: consumer advisory on all printed menus, repair front reach-in cooler, repair prep sink plumbing.
