Waffle House No. 783, 1702 E. Oglethorpe Blvd.
Score: 85, Grade: B
Violations: Observed waffle batter, milk and lemons being held above 41 degrees Fahrenheit. PIC discarded the food items. Repeat Violation. Observed no splash guard to separate the vegetable sink from the handwashing sink. Must be corrected by 04/10/2017. New Violation. Correct By April 10. Observed the ice scoop not being stored in a protected location to prevent possible contamination. PIC will place a container next to the ice machine for the scooper. New Violation. Correct by April 10.
Picnic Pizza, 2510 Archwood Drive
Score: 96, Grade: A
Violations: Observed an employee involved in food prep that was not using a disposable or easily cleanable hair net or other hair restraint. Discussed having all food prep employees use hair restraints with PIC. New Violation. Observed scoop in the ice bin that was not stored with its handle above the top of the food. Employee removed the ice scoop and placed it within the holder. Corrected On-Site. New Violation.
Remarks: Discussed using time as a public health control for pizzas that are cooked for lunch; discussed glove usage.

Violations: Observed no paper towels at hand sink; employee place paper towels at hand sink. Corrected On-Site. New Violation. Observed wet wiping cloth not stored in sanitizing solution between uses; employee place cloths in sanitizer solution. Corrected On-Site. New Violation. Observed interior of reach-in cooler soiled with accumulation of food residue. PIC will have cooler wipe down to remove food residue Repeat Violation. Violations: Observed the fume hood was not clean to sight and touch. The PIC will have the fume hood cleaned. New Violation. Observed the floor near the fryer and grill was not smooth and easily cleanable due to the linoleum flooring being damaged and removed. PIC will have flooring repaired to be smooth and easily cleanable. New Violation.

Violations: Observed no certified food safety manager for the restaurant. PIC will provide documentation to Environmental Health office. New Violation. Observed the interior of the ice machine was not clean. Discussed the frequency of cleaning with the PIC. Repeat Violation. Observed employee not wearing a cap or hair net. Violation: Observed TCS foods being held above 41 degrees Fahrenheit in the walk in cooler. See temp log. Items were removed from the cooler. Corrected On-Site. New Violation.
Remarks: Discussed maintaining temperature in the walk in cooler during the cleaning process or moving TCS foods to a different cooler; discussed floor tiles in the ware washing area and dessert area will be repaired this week; discussed utensils; discussed hot holding burgers; discussed light shields.

Observed no written procedure for employees to follow when responding to vomiting and fecal incidents. Gave PIC another copy of the vomit/fecal incident clean up form. Corrected On-Site. New Violation. Observed food items apples and oranges in dry storage that were not stored at least 6 inches above the floor. PIC will purchase shelving to store items correctly. New Violation. Observed no employee hand washing signage posted in restrooms used by employees. PIC will have signage placed in restrooms. Repeat Violation.

Violations: Observed open bags of rice exposed and broccoli not covered in reach in cooler; PIC close bags of rice and place lids on broccoli containers. Corrected On-Site. New Violation. Observed veggie sink not accessible due to storage of food containers. PIC was asked to removed food containers from veggie sink. Repeat Violation. Observed rubber gaskets on prep top reach in cooler badly damaged as to not provide proper sealing of cooler door. PIC will have gaskets repaired. Repeat Violation. Observed faucet leaking at hand sink; PIC will have faucet repaired. New Violation. Observed tile missing and broken inside walk in freezer at door. PIC will have tiled repaired. Repeat Violation. Observed floors under fryers and cooking station needs cleaning’ PIC stated they will have floors cleaned. Repeat Violation.
