Violations: Observed plates in the ware washing area that were not being sanitized due to ware washing machine not dispensing sanitizer as evidenced by test strips reading 0. Showed test strip results as well as discussed reading with Ms. Fletcher and new dishwasher employee. Sanitizer buckets changed out, tubes primed and ware washing machine put through a cycle. Test strips remained with 0 reading. Ms. Fletcher stated that she will call Echo lab to have ware washing machine serviced. She said that she will have the Echo lab representative instruct dishwasher employee and staff on the correct use and testing of the ware washing machine. Observed three-compartment sink filled with water but only paper towels clogging drain. Unable to locate drain plugs. During inspection, dishwasher employee and Ms. Fletcher purchased proper sink plugs that were placed in each compartment. Sanitizing compartment of three-compartment sink filled with chlorine and water mixture, which tested slightly above 100 ppm via chlorine test strip. Ms. Fletcher explained to the dishwasher employee and some staff that the three-compartment sink will need to be used only until the ware washing machine is fixed. Repeat Violation. Correct by Oct. 19.
Remarks: Observed that wall air conditioning has been installed, and Ms. Fletcher said there are plans to have ceiling tiles on both ends of the restaurant replaced. Observed plumber has been in and begun work on hand-washing sink near desert-making table. Other functioning hand-washing sink very near and is easy access for staff to use in the interim. Discussed repair of outside thermometer dial at cooler No. 1. Inside thermometer present and functioning. Discussed fan at desert bar.

Remarks: Discussed importance of date-marking all foods that are made and stored with PIC. Discussed single-service items being stored off of floor at least 6 inches.
