JULIE WELLS: Roasted peaches simply another way to enjoy delicious fruit

Why have I never tasted roasted peaches before in my life?
I stumbled upon today’s featured recipe one day when I was browsing the web. I saved the recipe and then, just as quickly as I saved it, I forgot about it.
Luckily, while I was cleaning out some of my recipes, I found it again and I’m so glad I did.
The best way I know how to describe this delightful and surprisingly delicious recipe is this: it is like each peach cobbler, but without all of the extra calories. There is no pie filling, which means there is no flour and extra sugar or eggs or any of those ingredients needed when making a cobbler.
Fresh peaches, honey, cinnamon and vanilla extract are all that is required to create this peach treat that will make your mouth water.
I read in a couple of the recipes online that you could top your bowl full of roasted peaches with yogurt, and you could, but I don’t think it needs anything.
If you aren’t watching your waistline, or just don’t mind the extra calories, a spoonful of vanilla bean ice cream on top of these peaches would just make this recipe over-the-top delicious.
I love a good fresh peach, and I don’t mind slicing one up and eating just as it is, so I wasn’t sure how good this roasted peach recipe was going to be, but it really surprised me. Even my husband, who doesn’t like peaches at all, enjoyed this dessert.
