JULIE WELLS: Smoked sausage and potato bake can be tasty breakfast or dinner

Breakfast food is good any time of the day, especially when it involves smoked sausage and potatoes. Today’s featured recipe is the kind of dish that should ensure easy prep and less time in the kitchen.
Sausage and potato bake is made up of beef smoked sausage, potatoes, an onion and a little bit of cheese. You toss all of the ingredients in a little olive oil, add some salt and pepper and a dash of garlic powder; pop it in the oven and that’s it.
Around this time every year, I try and run a few easy-peasy recipes to help out all of the parents who are trying to get back into the routine of school, homework and any extra curricular activities.
So maybe while dinner is in the oven, you and the kiddos can solve some math problems, go over spelling words or just spend some good quality time together.
As usual, I try to share with you all recipes that can be adapted as well. With that said, feel free to substitute the white potatoes for sweet potatoes. Also, I completely cheated and used a bag of Simply Potatoes, pre-cut potatoes, and they obviously saved me a lot of time in the kitchen.
If you are not a fan of the beef smoked sausage, there are plenty of turkey options out there as well.
Serve this up with a side of scrambled eggs or fresh fruit to complete your breakfast-for-dinner dish.

20-ounce bag of Simply Potatoes
One large sweet onion, chopped finely
