JULIE WELLS: Top banana bread bars with icing for a moist, sweet treat

Banana bread is one of my all time favorite comfort foods. Whether it’s sliced, shaped like a muffin or baked into the form of squares, there aren’t too many things that say comfort food like a good banana bread recipe.
That brings me to today’s recipe, banana bread bars.
My best friend, Kristie Blackwell, has, on several occasions, baked these bars and shared them with me. I was a little unsure about the frosting on top of the banana bread at first, but just one bite relieved all of my concerns.
One of Kristie’s secrets to making these delicious and perfectly moist bars is that she uses overripe bananas. She told me that the bananas are almost totally brown by the time she mashes them up and adds them to the batter.
My daughter Joy absolutely loves these bars as well. She may only be 3 years old, but she knows a good thing when she tastes it. The first time Joy tried a bite of these banana bread bars, she said, “Mama, these are delicious!” She’s right, folks.
Bake a pan of these bars up and share some with a friend. Trust me, it will make their day, and maybe what makes these bars so sweet is that Kristie makes them with such love.
