SCA student Elizabeth Montgomery places in guacamole contest
Sherwood Christian Academy student uses money from home-made goodies to fund mission trips

ALBANY — Competing with about 20 contestants, Sherwood Christian Academy student Elizabeth Montgomery took seventh place in the World Guacamole Contest in California recently with the recipe she used to raise money for a mission trip to Honduras.
“One day my mom came home, it was just kind of a random spur of the moment thing,” Elizabeth said. “She was like ‘Do you want to make guacamole?’ and I was like ‘Sure.’ At the time, I had been looking for ways to sell things for mission trips. We made it and we kind of tweaked it a little bit to our own recipe and then made a recipe from that. Then I got this idea to use that as my fundraiser for mission trips, and since I was doing well, my dad wanted to convert it into a business so that’s kind of how it got started.”
Elizabeth said that SCA has mission trips every year. This year she went to Honduras, where she and others worked with a family to build a home. On a previous mission trip, Elizabeth said she went to New Orleans to assist a church there. For future mission trips, she doesn’t have any location in mind, but she said she’ll go anywhere God calls her to.
“I love missions,” Elizabeth said. “I’m passionate about mission trips, and I don’t know, the Lord has always put that on my heart.”
Other than her up-and-coming guacamole business, “Guac On,” Elizabeth is a down-to-Earth high school students with an interest in sports and her own future. She said she loves to run, but due to an injury she’s had to step back from track and field and go to physical therapy. Thursday, however, was her last day of therapy. She said that she is also interested in dentistry but has not yet decided on a college or university.
