Score: 96 Grade: A
Violations: Observed ice in the ice machine used as food after it has been used as medium for cooling the exterior surfaces of lemons in a plastic container. PIC removed the container from the ice machine. Corrected on-site, new violation. Observed shrimp being thawed in the vegetable sink. Discussed with the PIC that only vegetables are allowed to be washed in the sink. Repeat violation.

Violations: Observed QAC not at proper minimum strength for wiping cloth. PIC had employee refill sanitizer to proper strength. Corrected on-site, new violation. Observed floors underneath and behind fryers needs cleaning. PIC will have employee clean floors. New violation. Observed leak coming from pipe in ceiling in storage area. PIC will have pipe repaired. New violation.

Violations: Observed no hand-drying provision at the hand sink in the kitchen. Discussed placing towels at the sink until the towel dispenser is installed. New violation.
