Fairfield Inn/Food Service, 3011 Kensington Court

Notes: Observed TCS foods boiled eggs and cut melons in ice baths, cream cheese on the counter, and yogurt and milk in the reach in cooler being held above 41 degrees Fahrenheit. PIC discarded the items. Corrected On-Site. New Violation.

Mikata Japanese Steak House, 2610 Dawson Road

Notes: Observed utensils being sanitized in the ware washing machine and no chlorine sanitizer was being dispensed. Employee replaced chlorine supply and the machine began dispensing at 50 ppm. Corrected On-Site. New Violation.

Notes: Observed an employee beverage cup in the kitchen area that did not have a secure lid and straw. PIC discarded cup. Corrected On-Site. New Violation; Observed drain plug not in place on the outside receptacle. Discussed replacing drain plug with PIC. New Violation; Observed ceiling in dry storage area not maintained in good repair due to a leak. PIC has put in an order to have ceiling repaired. New Violation.

Notes: Observed TCS foods that were not being maintained at 41 degrees Fahrenheit or below in a cold holding unit and ice baths. See Temperature log. PIC discarded items. Corrected On-Site. New Violation; Observed a scooping utensil stored in a bulk container of brown sugar that did not have a handle that could be stored above the top of the food. PIC replaced the utensil with a scoop with a handle. Corrected On-Site. New Violation.

PIC will speak to the owner about placing a splash guard between the 3 compartment and hand washing sink. Repeat Violation.

Notes: Observed stove top burners and flat top grill rusting and in need of cleaning. PIC will have surfaces sandblasted and washed, rinsed, and sanitized. Repeat Violation.

Notes: Observed chemical cleansers in working containers (spray bottles) that were not labeled with the common name of the chemicals contained within. PIC labeled the bottles. Corrected On-Site. New Violation.

Notes: Observed gaskets on large floor freezer units in need of repair. PIC will have doors replaced. New Violation.

Notes: Observed an employee beverage in the food prep area that was not secured with a tightly fitting lid and straw. PIC removed the cup. Corrected On-Site. New Violation; Observed utensils being sanitized in water that did not contain the minimum sanitizer concentration for quaternary ammonia. Employee made fresh sanitizer at 100PPM. Corrected On-Site.
