Notes: Observed the PIC was not actively ensuring compliance of employees by routinely monitoring employee hand washing, sanitizing of utensils, receiving of shipments, proper cooking techniques, and proper cooling methods. Discussed the responsibilities of the PIC with the PIC. New Violation; Observed hand sink was not supplied with an agents for cleansing hands. PIC stated soap will be added today. New Violation; Observed raw ground beef stored on a shelf near ready to eat cooked macaroni. PIC moved macaroni to a different shelf. Corrected On-Site. New Violation; Observed the chlorine concentration being dispensed at the ware washing machine did not meet the minimum concentration of 50 ppm required by the machine’s specifications. PIC will have the machine serviced by a contractor. New Violation; Observed prepackaged time/temperature control for safety foods potato salad, fresh salad, and tuna salad that were opened and were not labeled with the 7 days from the day the package was originally opened so the items can be properly disposed. PIC discarded the items. Corrected On-Site. New Violation; Observed chicken thawing in resting water. Discussed thawing under running water or in the walk in cooler. The chicken was removed from the water. Corrected On-Site. New Violation; Observed that baking pans were encrusted with grease on the bottom side of the pans. Discussed cleaning pans with PIC.
