Notes: Observed steak being thawed at room temperature and ground beef being thawed in standing water. Discussed submerging food and thawing under running water or thawing in walk-in cooler. The steak was moved to the walk-in and the ground beef was placed under running water. Corrected on-site, new violation. Observed cloths for wiping counters stored in water that did not contain any chemical sanitizer solution. PIC made fresh sanitizer. Corrected on-site, new violation. Observed a cooler of ice being stored in the vegetable sink. Discussed that vegetable sink must be designated for washing fruits and vegetables only. The cooler was removed.
