Notes: Observed dish machine in the main kitchen not reaching the minimum specified temperature per manufacturer specifications for hot water sanitization. The repair man came during the inspection and the system began to reach 150 degrees for the wash and 180 degrees for the rinse cycle. Corrected On-Site. New Violation; Observed no chemical sanitizer being dispensed from the ware washing machine at the bar so the minimum requirements were not met. The repair man came during the inspection and the dish machine dispensed chlorine at 200 PPM. Corrected On-Site. New Violation.

Notes: Observed fume hood near the fryer was not clean to sight and touch. PIC will have fume hood cleaned today. New Violation; Observed utensils directly stacked while wet so that air drying was not encouraged. PIC restacked utensils. Corrected On-Site. Repeat Violation.

Notes: Observed an employee beverage in the kitchen area that was not in a single service beverage cup with a secure lid and straw. Discussed proper beverage cups for employee drinks with PIC. New Violation; Observed wiping cloths that were held in chemical sanitizer solution that was not at the required minimum concentration. The PIC replaced the sanitizer with solution that had a chlorine concentration of 100 PPM. Corrected On-Site. New Violation.
