Notes: Observed raw eggs stored above lemons in walk in cooler. Food employee removed eggs and placed them at bottom of self in walk in cooler. Corrected On-Site; New Violation. Observed chlorine chemical sanitizer concentration too high in the mechanical warewashing machine. Chlorine concentration was over 200 ppm. Proper concentration is 50 – 100 ppm. PIC will have sanitizer system re-calibrated to dispense the proper concentration of sanitizer; Repeat Violation. Observed no cold water at hand sink: PIC will have hand sink repaired; New Violation. Observed hot water fixture at veggie sink and meat sink needs repairing. PIC will have fixtures repaired; New Violation.
