Notes: Observed the PIC was not able to demonstrate knowledge of risk of foodborne illness by having no violations of priority items during the inspection. Also the PIC incorrectly answered food safety questions when stating the required food temperatures and times for safe cooking and reheating of time/temperature control for safety foods. Discussed areas of knowledge that must be demonstrated with the PIC. New Violation; Observed food employees not cleaning their hands and changing gloves when switching between working with raw animal food ground beef and cooked (ready to eat foods). Discussed when hand washing should take place with the PIC. New Violation; Observed TCS foods steak and hamburgers not being maintained at 41 degrees Fahrenheit due to improper seal on the cooler door. PIC discarded the items. Corrected On-Site. New Violation; Observed TCS food ribs that had been cooked and held for more than 24 hours in the walk in cooler that were not clearly marked to indicate the day which the food should be consumed, sold, or discarded.
