Notes: Observed the PIC was not able to demonstrate knowledge of risk of foodborne illness by having no violations of priority items during the inspection. Also the PIC incorrectly answered food safety questions when stating the required food temperatures and times for safe cooking and reheating of time/temperature control for safety foods. Discussed areas of knowledge that must be demonstrated with the PIC. Discussed when hand washing should take place with the PIC.
