Albany Technical College/Titan’s Cafe, 1704 S Slappey Blvd.

Score: 92

Notes: Observed microwave needs cleaning. Employee wipe microwave down with wiping cloth. Corrected On-Site. New Violation; Observed fume hood needs cleaning. Person In Charge (PIC) will have fume hood cleaned. New Violation; Observed wiping cloths not stored in sanitizer solution. Sanitizer solution was tested to be 0 ppm using both QAC and chlorine test strips. PIC will have sanitizer dispenser recalibrated. Repeat Violation.

Notes: Observed raw chicken breast being thawed on a shelf that was not being thawed under refrigeration or completely submerged under running water. PIC moved chicken to the walk in cooler. Discussed proper thawing methods with PIC. Corrected On-Site. New Violation; Observed containers of cheese sauce that were not stored at least 6 inches above the floor. PIC moved items to be stored 6 inches above the floor. Corrected On-Site. New Violation; Observed cloths for wiping counters and other equipment in the establishment that were not stored in chemical sanitizer solution between uses. PIC stored wiping cloth in sanitizer. Corrected On-Site. New Violation; Observed scooping utensils in bulk storage containers that were not stored with the handle above the top of the food. PIC stored scoops with handles above the top of the food. Corrected On-Site. New Violation; Observed missing and broken tiles in the kitchen area around the grill and stove. PIC will have tiles replaced. New Violation.

Notes: Observed hand washing sink not designed or equipped with an apron to deflect condensation, drips, and dust. Person in charge to have apron splash guard installed. New Violation; Observed no drain boards or designated utensil racks or tables large enough to separately accommodate all soiled and cleaned items before cleaning and after sanitizing. Person in charge to install air dry area. New Violation.

Michael’s Bar-B-Que, 2319 Gillionville Road

Notes: Observed no hand soap was supplied to the hand washing sink due to soap being placed at the vegetable sink. PIC moved soap to hand washing sink. Discussed using only hand washing sink for cleaning hands with the PIC. Corrected On-Site. New Violation; Observed no written policy on file to educate employees on how to respond to vomit/fecal incidents. Gave PIC another copy of the vomit/fecal incident clean up form. Corrected On-Site. New Violation; Observed bottles of cooking oil that were not stored at least 6 inches above the floor. PIC stored the items 6 inches above the floor. Corrected On-Site. New Violation; Observed utensils used for scooping in a bulk sugar bin that were not stored with the handle above the top of the food. PIC removed the extra utensils and stored the remaining scoop with handle above the food. Corrected On-Site. New Violation.

Coach’s Sports Bar LLC, 2610 Dawson Road, Site 10 & 11

Notes: Observed no current written policy to demonstrate how employees comply with reporting responsibilities and proper restriction and exclusion. Gave PIC another copy of the employee health policy. Corrected On-Site. New Violation; Observed hand sink at the bar was not accessible due to utensils being in the sink. Discussing using a hand sink only for hand washing with the PIC. New Violation; Observed no written procedure to educate employees how to respond to vomit/fecal incidents onto surfaces in the facility. Gave PIC another copy of the vomit/fecal incident form. Notes: Observed food contact surfaces of deep fryer not clean to sight and touch. Person in charge will have deep fryer food contact surfaces washed, rinsed and sanitized by end of day 10/27/2016. New Violation.

Notes: Observed no employee health policy for the facility. PIC was given a copy of the policy. New Violation; Observed that the PIC could not find the copy of the vomiting/fecal clean up procedure. PIC was given a copy of the procedure. Repeat Violation; Observed lids and doors not closed on the dumpster when not in use. PIC will close the lids and doors. New Violation.
