DOUGHERTY

NOV. 1

China Garden, 2228 N. Slappey Blvd.

Score: 83

Notes: Observed frozen meat products not separated by types of raw animal foods in floor freezer units. PIC will separate frozen products by seafood, beef, chicken, pork, etc.; new violation. Observed food not protected from cross-contamination by storing the food in packages, covered containers or wrappings. PIC covered foods; corrected on-site, new violation. Observed fume hood not clean to sight and touch. PIC will have fume hood cleaned; new violation. Observed non food contact surfaces not clean to sight and touch. PIC will have cooking equipment near the woks and coolers cleaned; repeat violation. Observed non-essential items and materials stored on the premises. Discussed removal of items; repeat violation. Observed floors with cardboard material that is not smooth and easily cleanable. PIC will remove all cardboard surfaces from kitchen; new violation.

Arby’s, 1105 N. Slappey Blvd.

Notes: Observed drink nozzles from drink machines in lobby and drive-through needs cleaning; PIC will have nozzles washed, rinsed and sanitized; repeat violation. Observed baffle inside ice machine needs cleaning. PIC had employee clean ice machine; new violation.

Arby’s, 2718 Dawson Road

Notes: Observed cloths for wiping counters and other surfaces in the facility that were stored in solution that contained no chemical sanitizer. PIC made fresh sanitizer at a concentration of 200 PPM; corrected on-site, new violation. Observed the previous inspection score was not prominently displayed at the drive-through to be viewed by patrons. PIC will post the new score; new violation.

Notes: Observed interior of fountain drink nozzles not clean to sight and touch. PIC will have nozzles washed, rinsed and sanitized; corrected on-site, new violation. Observed sanitizer solution in sanitizer bucket not at the proper concentration of 200 ppm QAC. Solution was tested as 100 ppm. PIC changed sanitizer solution; corrected on-site, new violation.

Notes: Observed previously frozen milk that has been thawed and opened with a manufactures date of 7/12/16 and 7/13/16 not properly date marked with a discard date. PIC removed items from service; corrected on-site, new violation.

Notes: Observed the presence of ants on floors and counters. Discussed obtaining certified pest control operator to treat unit for ants by 11/15/16; new violation.

Notes: Observed no written policy to educate employees how to respond to vomit and fecal incidents onto surfaces in the facility. Gave the PIC another copy of the vomit/fecal incident form; corrected on-site, new violation.

Long John Silver, 1805 N. Slappey Blvd.

Notes: Observed person in charge could not provide a record of food employee acknowledgement to employee health policy. Person in charge had all food employees on duty sign form; corrected on-site, new violation. Observed no dedicated sink for the washing of raw vegetables. Person in charge will discontinue the use of raw vegetables immediately; new violation. Observed inspection report not properly posted within 15 feet of main entrance and copy of top one-third not posted in drive-through window. Person in charge will post; new violation. Observed hand-washing sink not designed with an apron/deflector to prevent potential cross contamination of adjacent food service equipment. Person in charge to have an apron/deflector installed; new violation. Observed manual dishwashing procedure for sanitizing not set up correctly to sanitize utensils at the proper chemical concentration for quaternary ammonia. Person in charge reset the sanitizer sink. Corrected On-Site. New Violation; Observed no receptacle positioned at hand-wash sink to collect disposable towels. Person in charge will post a trash receptacle; new violation. Observed outdoor garbage storage receptacle (Dumpster) in need of repair. Person in charge to call service provider; new violation. Observed interior of cabinets on serving line in need of repair. Person in charge to contact facilities maintenance to repair; new violation. Observed covered base tile and wall covering materials not properly maintained in good repair. Person in charge to make arrangements for repair; repeat violation.

Pruitt Health Palmyra, 1904 Palmyra Road

Notes: Observed utensils in veggie sink. Employee removed utensils from veggie sink and washed, rinsed and sanitized sink; corrected on-site, repeat violation.

Wing Dixie & Deli, 2601 Dawson Road, Suite B4

Notes: Observed TCS food items cold holding in prep cooler at the front of the food service that were not being maintained at 41 degrees Fahrenheit or below. See temp log. PIC removed the items. No items will be held at cold unit until it is repaired; corrected on-site, new violation. Observed TCS food fried chicken wings being held at the fryer that were not being maintained at 135 degrees Fahrenheit or above. PIC removed the items; corrected on-site, new violation. Observed fries in the walk-in freezer and bins of sugar and corn starch that were not stored at least 6 inches above the floor. PIC will ensure that all items are stored at least 6 inches above the floor; new violation.

Zaxby’s of Albany, 405 N. Slappey Blvd.

Notes: Observed faucet at three-compartment sink leaking. General manager will put in work order to have faucet repaired; new violation.

Notes: Observed no written policy to demonstrate how employees comply with reporting responsibilities and restriction and exclusion of sick employees. Gave the PIC another copy of the current employee health policy; corrected on-site, new violation. Observed no written policy to educate employees on responding to vomit/fecal incidents onto surfaces in the facility. Gave the PIC another copy of the vomit/fecal incident form; corrected on-site, new violation. Observed cloth for wiping counters and other surfaces in the facility that was not stored in chemical sanitizer solution during periods of non-use. PIC removed the cloth; corrected on-site, new violation.

Notes: Observed no supply of hot/warm water at hand sinks in restrooms used by employees at time of inspection; new violation. Observed cloths used for wiping counters and equipment held in a sanitizer solution of less than 50 ppm as measured using test strips provided. Manager remade the solution of sanitizer and adjusted the solution to a concentration of 200 ppm; corrected on-site, new violation. No employee hand wash signage posted at restrooms used by employees at time of inspection; new violation.
