Violation: Observed QAC (quaternary ammonium compounds) not at the proper strength in the sanitizer buckets. PIC (person in charge) refilled sanitizer buckets. Repeat Violation. Remarks: +/- 2 degrees Fahrenheit allowed for thermometer accuracy.

Violation: Observed an employee’s personal drink in the walk-in cooler. The drink was open, and it was not in a single-service cup with a straw and tightly fitting lid. PIC discarded the drink. New Violation. Remarks: Discussed drinking requirements in food service areas.

Violations: Observed the most previous inspection not posted. PIC will post the previous inspection. Repeat Violation. Observed the Dumpster area not clean to prevent the attraction of rodents and insects. PIC will clean the Dumpster area. Repeat Violation. Remarks: +/- 2 degrees Fahrenheit allowed for thermometer accuracy.

EL RANCHO RESTAURANT, 2415 Dawson Road

Violations: Observed that the inside of the reach-in coolers and freezers were not clean to sight and touch with a gloved hand. Discussed this with the CFSM (certified food safety manager). New Violation. Correct by Oct. 9. Observed some grease spatter on floor in front of oven and on walls. Also, some food spatter on cooler where shredded cheese is kept on ice and on the outside of prep-tops, coolers and freezers. Discussed this with manager. New Violation. Correct by Oct. 9. Remarks: +/- 2 degrees Fahrenheit for thermometer accuracy. Reminded manager that food contact surfaces as well as non-food contact surfaces must be kept clean and sanitized. He agreed to ensure a routine cleaning/sanitizing schedule is maintained for those food contact as well as non-food contact surfaces mentioned in above violations.
