Albany Pretzel Bakery c/o Auntie Anne’s, 2601 Dawson Road Suite C-3

Aug. 15Score: 95 Grade: A

Violations: Observed wiping cloths stored in solution that did not contain any quaternary ammonia sanitizer. PIC made fresh sanitizer at 200 PPM. Corrected on-site, new violation. Observed that the hot water under pressure at the hand sink had been turned off by the PIC. PIC turned the hot water back on. Corrected on-site, new violation.

Remarks: Discussed utensil stacking. Discussed using gloves while making pretzels. PIC placed vent that had been removed back on the refrigerator.

Austin’s Firegrill, 2817 Old Dawson Road

Aug. 15Score: 96 Grade: A

Violations: Observed the only CFSM displayed on the wall was expired. Discussed with CFSM and owner, Mr. Newman, that CFSM certification has expired. CFSM, Mr. Lyons Sr., stated that he will be taking the course this week. Another CFSM, Roxie Hurst, presently working at the restaurant stated that her certification is up to date and she agreed to fax her current CFSM certification to E.H. Office and display a copy at the restaurant within view of customers. New violation.

Remarks: PIC to have dish washer serviced. Just prepped raw chicken in cooler draw No. 1 50.1 degrees Fahrenheit. Ice bags added to drawer. Temperature recheck 44 degrees Fahrenheit. Addendum: Aug. 16, Fax of Roxy Hurst’s current Certified Food Safety Certificate received. Hard copy on file.

Violations: Observed potentially hazardous foods cold held at greater than 41 degrees Fahrenheit. Discussed with CFSM potentially hazardous foods are to be discarded and cooler is to be serviced. New violation. Observed cloths for wiping counters and other surfaces that were not stored in chemical sanitizer solution between uses . Discussed with CFSM and corrected on site with container containing chlorine sanitizer within proper range as evidenced by test strip. Corrected on-site, new violation.

Repeat violation. Observed bottom interior of walk-in cooler with excess water. PIC will have walk-in cooler bottom cleaned. New violation. Observed buildup of dust on vents; PIC will have vents cleaned. New violation.

Violation: Observed the ware washing machine temperature measuring device that indicates the temperature of the water not reaching 150 degrees Fahrenheit for the wash cycle and 180 degrees for Fahrenheit for the rinse cycle. PIC will contact the company to have the machine serviced. New violation.

Newman’s Bar & Grill, 2807 Meredyth Drive

Violations: Observed a raw steak in sliding glass reach-in cooler uncovered. CFSM notified and corrected on site by having steak wrapped in plastic wrap. In the front of the kitchen, observed some prep-top cooler 1 and prep-top cooler 2 foods uncovered. Discussed with CFSM so plastic tops placed on top of those items that were found to be uncovered. CSFM to ensure items are covered between use and check temperatures routinely to ensure food temperatures are held at 41 degrees Fahrenheit or below. New violation. Observed clothes for wiping counters and other surfaces in the facility that were not stored in chemical sanitizer solution between uses. PIC will have provided sanitizer buckets for each station and ensure wiping clothes are stored in buckets with proper concentration of sanitizer between use. New violation.

Remarks: Discussed with CFSM noted toilet leak in Ladies Room. CFSM to have this repaired. Discussed with CFSM tiles in the kitchen need repair with tile that is smooth, non-absorbent for easy cleaning. CSFM to have dishwasher serviced.

Panera Bread, 815 N. Westover Blvd.

Violations: Observed utensils near the three-compartment sink that were stacked directly while wet so that air drying was not encouraged. PIC restacked items. Corrected on-site, repeat violation. Observed unwrapped forks that were not presented so that only handles are touched by employees. PIC had an employee rearrange forks. Corrected on-site, new violation.

Violations: Observed TCS foods in the reach-in cooler that had been held for more than 24 hours and were not date marked. PIC discarded items. Corrected on-site, new violation. Observed wiping cloths that were not stored in chemical sanitizer solution during periods of non-use. The cloths were taken to the laundry. Corrected on-site, new violation.

Remarks: Discussed fume hood. CFSM left two weeks ago. Discussed that the facility will have 60 days from that date to replace the CFSM. Two new employees have been registered to take the class, and the certificates will be faxed to Environmental Health once completed.

Violations: Observed wiping cloths that were not stored in chemical sanitizer solution at the proper strength during periods of non-use. PIC remade sanitizer at 200 PPM. Corrected on-site, repeat violation.

Remarks: Discussed ensuring sanitizer is at the proper strength before using it to store wiping cloths. Discussed moving covered trash receptacle into the restroom.

Observed dead insects and rodents in the dry storage area not removed from the control devices and the premises at a frequency that prevents their accumulation, decomposition or the attraction of pests. New violation. Correct by Aug. 17.

Remarks: The facility will have until Aug. 17 to remove the insects and rodents from the premises. The facility will have until Aug. 28 to have hot water fixed in the employee restrooms
