Doo-Dah’s Bar & Grill, 411 Philema Road

Score: 95, Grade: A

Violations: Observed mold build up in the interior of the ice machine. Discussed the frequency of cleaning with the PIC. New Violation. Observed water leaking on the fume hood from the roof. PIC has contacted a roofer to have the leak repaired. New Violation.

Remarks: Discussed routine cleaning of the interior of the refrigerators.

Score: 99, Grade: A

Violation: Observed the interior of the reach in refrigerator with an accumulation of soil residue. Discussed the frequency of cleaning with the PIC. New Violation.

Remarks: Discussed labeling the 3 compartment sink wash, rinse and sanitize.

Score: 99, Grade: A

Violation: Observed utensils near 3 compartment sink that were directly stacked while wet. PIC to have utensils restacked to encourage air drying. New Violation. Correct by Dec. 20.

Remarks: Discussed covering food containers when not in use.

Easton Creek, LLC/DBA Mellow Mushroom Pizza Bakers, 2825 Nottingham Way

Score: 97, Grade: A

Violations: Observed hand washing sink was not being supplied with hot water under pressure. Discussed with CFSM. Plumber came during inspection and repaired problem. Corrected On-Site. New Violation. Observed cardboard placed on floor in front of prep top cooler. Discussed with CFSM. CFSM to have cardboard removed. Corrected On-Site. New Violation.

Remarks: Satisfactory for permit and change of ownership. Gave CFSM a copy of food service rules, choking poster, hand washing signs and Servsafe information. CSFM already had on hand the employee health policy & vomit/fecal incident clean up procedure. Operational inspection will occur within 60 days. Discussed thermometer gauge on dishwasher. Discussed that prep top/reach in cooler is not to be used until serviced. Discussed proper thawing methods. Discussed routinely taking temperatures of foods in ice baths.
