Hamburgers (130F), macaroni and cheese (118F) hot held below 135 degrees Fahrenheit. EHS instructed PIC to reheat food items to 165F before hot holding; repeat violation, correct by Jan. 6. Items to address before next inspection: Date marking, handwashing, sneeze guard, vegetable and meat prep sink locations, reseal kitchen floor, digital thermometer, temperature logs, long-term compliance.
