Dec. 27
DJ’s Lounge & Grill, 1001 Radium Springs Road
Score: 95, Grade: A
Violations: Observed wiping cloths being held a chemical sanitizer solution between uses. PIC placed the cloths in solution. New Violation. Observed no drain plug on the dumpster. PIC will contact Waste Industries to get a drain plug. Repeat Violation. Observed no lid on the trashcan in the women’s restroom. PIC will replace the lid. New Violation. Observed the floors and walls need to be cleaned in the kitchen area. PIC will have the area cleaned. New Violation.
Taqueria Cruz-Mobile, 3115 Sylvester Road
Score: 91, Grade: A
Violations: Observed raw chicken stored on the shelf next to cooked rice and shredded chicken. PIC separated the raw meat from the ready to eat foods. Corrected On-Site. New Violation.
Remarks: Discussed separating raw foods from ready to eat foods in the reach in cooler.

Score: 98, Grade: A
Violations: Observed the previous inspection not posted. PIC will post new inspection. Corrected On-Site. New Violation. Observed women’s restroom not equipped with a self-closing door when required. PIC will have a self closing device place on the restroom door. New Violation.
Remarks: Discussed making sure the dumpster lids are kept closed at all times.

Score: 86, Grade: B
Violations: Observed no paper towels in the men’s and women’s restroom. PIC will put paper towels in the restrooms. New Violation. Observed the inside of the ice machine has mold buildup. PIC will clean the inside of the ice machine. Repeat Violation. Observed splash guard missing to separate 3 compartment sink from hand sink. PIC will speak to the owner about placing a splash guard between the 3 compartment and hand washing sink. Repeat Violation. Correct by Jan. 8. Observed no toilet paper in the men’s restroom. PIC will place toilet paper in the restroom. Repeat Violation.
Remarks: PIC will have until Jan. 8 to have a splash placed between the hand washing and 3 compartment sink.

Violation: Observed mashed potato scoop stored on top of soiled container lid. PIC removed scoop and replaced it with a clean scoop stored in mashed potatoes. PIC also instructed other employees on proper scoop storage. Corrected On-Site. New Violation.
Remarks: Discussed employee health. Observed good handwashing practices. Observed posted vomit clean up/employee health procedures. All temps within error range of thermometer. Items cooling should reach designated temps within time frame based on observations.

PIC stated he would rearrange equipment to make bathroom accessible New Violation.
