Violations: Observed vent above 3-comp sink with dust build up; PIC will have vent cleaned. Repeat Violation.

Violations: Observed card board on shelves where to go containers & single use utensils are kept. Cardboard on top of Main Kitchen Reach in Cooler 1. Card board also on floor in front of grill. Discussed with PIC and explained that shelving, cooler tops and flooring must have nonabsorbent material in order for it to be easily cleaned and sanitized. PIC to remove cardboard and ensure staff is aware that surfaces must be nonabsorbent and easily cleanable and sanitized. New Violation. Correct by Jan. 23. Observed outside dumpster was not covered on top or on the sides. Discussed with PIC. PIC to cover dumpster and is to ensure staff is made aware it needs to be closed when not in use. New Violation. Remarks: Discussed women’s room under some renovations and one area of torn wall paper will need to be repaired or replaced. Discussed keeping thermometers within view in all coolers and freezers as well as thermometers handy to check temps such as hot holding, cold holding and cooking temperatures. PIC made chlorine sanitizer at 100 PPM to keep cloths in between use. Few chlorine test strips given by EH until new container may be purchased to have on hand. Corrected On-Site. Repeat Violation.

Violation: Observed cloth sanitizing bucket being stored on same level at pizza slicing station. Discussed with PIC. QAC sanitizing bucket placed below level of pizza slicing station. Remarks: Discussed dishwasher servicing and routine checking of chlorine sanitizing solution of 100 ppm. Also discussed routine checking of sanitizing buckets to ensure chlorine mixture of 100 ppm.
