Icon’s Bar & Grill, 104 N. Washington St.

Score: 90, Grade: A

Violations: Observed no paper towels at the employee hand washing sink. PIC will replace the paper towels at the hand washing sink. New violation. Observed the fume hood needs to be cleaned. Discussed frequency of cleaning the fume hood. Repeat violation.

Score: 100, Grade: A

Jo’s Southern Cooking, 1935 Dawson Road

Score: 93, Grade: A

Violations: Observed utensils being washed in the mechanical ware washing machine, but it was not dispensing chlorine sanitizer. PIC will have the ware washing machine serviced. New violation. Observed cloths for wiping counters and other surfaces in the facility that were not stored in chemical sanitizer solution between uses. PIC placed cloths in sanitizer solution. Corrected on-site, new violation.

Remarks: Discussed that foods that have been cooled and held overnight will be reheated to 165 degrees Fahrenheit in the oven before being placed in the hot holding unit. Discussed that foods that are not needed for immediate service will be cooled down to 41 degrees Fahrenheit and reheated as needed to eliminate lack of hot storage space. Discussed having dishwasher periodically checked and the sanitizer concentration at the ware washing machine to ensure proper dispensing.

Score: 96, Grade: A

Violations: Observed a box of seasoned beef stored on the floor of the walk-in cooler. The manager had an employee move the box of seasoned beef to a shelf for storage. Corrected on-site, new violation. Observed plastic-wrapped straws and plastic-wrapped cups stored in a manner that could possibly cause contamination from sanitizer buckets. Manager had buckets moved to a new location. Corrected on-site, new violation.

Violations: Milk (50F) cold held above 41 degrees Fahrenheit. EHS instructed PIC to remove all TCS foods from walk-in cooler and place in functioning cold hold units. EHS instructed PIC to contact a service professional to have the walk-in cooler repaired. New violation. Correct by May 30.

Hardees No. 1505693, 699 Forrester Drive, Dawson

Score: 86, Grade: B

Violations: Food employee failed to wash hands after handling soiled items (plastic bags, trays) and before handling ready-to-eat foods (buns, vegetables). EHS instructed PIC to discard contaminated food items, have food employee wash hands and reglove and provide handwashing training. New violation. Correct by May 26. No paper towels available at rear kitchen hand sink. Soiled milk shake utensil in front kitchen hand sink. EHS instructed PIC to provide paper towels and remove soiled utensil. New violation. Correct by May 26. Single-service paper products stored on floor in dry storage building. PIC properly stored paper products. Corrected on-site, new violation.

Remarks: Items to address before next inspection: cooling procedures, Public Health Control written procedures, covering foods, choking poster, fingernails, beard guard.

MITCHELL
