Score: 93, Grade: A
Violations: Observed sauces placed in front of the stove/grill area not covered between use. Discussed with CFSM. CFSM placed lids on all containers on site. Corrected On-Site. New Violation. Observed wiping clothes used for wiping counters and other surfaces not stored in sanitizing solution. Discussed with CFSM. CFSM placed cloths in chlorine 100 ppm sanitizing solution. Corrected On-Site. New Violation.

Score: 96, Grade: A
Violation: No Certified Food Manager for establishment; Manager will have someone certified at this location because he was informed he cannot use his certification at this location and the one on Gillionville Road. New Violation.

Score: 83, Grade: B
Violations: Observed food containers in reach in freezer with no lid; PIC placed lids on containers. Repeat Violation. Observed veggie sink not accessible due to storage of food containers. PIC was asked to removed food containers from veggie sink. Repeat Violation. Observed mop sink not accessible; PIC was informed to remove items from mop sink. New Violation. Observed floors underneath fryers and wok station needs cleaning; PIC will clean floors. Repeat Violation. Observed back door with small openings to the outside that needs to be sealed; PIC will have small openings sealed. New Violation.

Score: 92, Grade: A
Violations: Observed interior of ice machine needs cleaning. Discussed frequency of cleaning with the PIC. Repeat Violation. Observed no hot or cold water at the employee handwashing sink. PIC will have the sink repaired. New Violation.
Remarks: Discussed the frequency of cleaning the floors with the PIC.
San Joe’s, 2401 Dawson Road
Score: 87, Grade: B
Violations: Observed no CFSM certification displayed. Discussed with PIC. PIC to ensure CFSM certification is displayed within view of the public. New Violation. Correct by Oct. 17. Noted two food containers in Cooler 2 not covered and protected. Discussed with PIC and corrected on site by covering containers with aluminum foil. Corrected On-Site. New Violation. Observed no drain plugs in three-compartment sink located in both buildings. Drains being plugged with paper towels. Discussed with PIC. PIC to have proper drain plugs replaced. New Violation. Observed the tiling floor inside the building where the freezer and ice machine is located not smooth and easily cleanable. Discussed with PIC. PIC to have floor tile repaired. New Violation. Correct by Oct. 31. Observed small window at the end of kitchen open without screen protection. Discussed with PIC. PIC to have screen replaced. New Violation. Correct by Oct. 3.

Violation: Observed that the toilet room used by females was not provided with a covered receptacle. Discussed with PIC. PIC to have lids provided for receptacles. New Violation. Correct by Oct. 18.
Remarks: Spoke with Manager T. Brown regarding tiles in ware washing area and dessert area. Contractor has replaced tiles in the ware washing area and will be returning to replace those tiles in the dessert area.

Violation: Observed wet wiping cloth not stored in sanitizing solution between uses. Inform PIC to keep cloths in sanitizer solution between uses. New Violation.

Violations: Observed the facility without a vomiting/fecal cleanup procedure. PIC was provided with a copy of the procedure. Corrected On-Site. New Violation.
Remarks: Discussed how to cool tomatoes before placing them on prep top cooler.

PIC to cover those items with aluminum foil or plastic wrap and ensure items are kept covered when not in use. New Violation. Correct by Oct. 4.
