Violations: Observed inside of ice machine not clean to sight and touch. Black substance noted on interior of ice machine. Discussed with PIC. Interior of ice machine to be cleaned and sanitized by PIC. Discussed routine cleaning and sanitizing ice machine at least once every 24 hours. Repeat Violation. Correct Sept. 19. In the Main Kitchen, observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit located in the glass door reach in cooler. Discussed with PIC. PIC to discard potentially hazardous food and use other coolers until the glass door cooler is serviced. New Violation. Correct by Oct. 3.

Violation: Observed utensils near the 3 compartment sink that were directly stacked while wet so that air drying was not encouraged. PIC will discuss proper stacking methods with employees. New Violation.

Discussed with PIC and corrected on site. Fresh new water with chlorine mixed at 100 ppm prepared and wiping clothes transferred to new container. PIC to test sanitizing containers routinely to ensure proper chlorine ppm with test strips on hand. Corrected On-Site. New Violation.
