White chocolate lovers, we may have found your new favorite fall cookie. These pumpkin cookies are moist with a slight crunch to them. The white chocolate chips stand out with the flavorful pumpkin spice. White chocolate and pumpkin compliment each other flawlessly in this easy-to-make cookie.
Ingredients
- 2 1/4 c all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp pumpkin pie spice
- 1 tsp ground cinnamon
- 1/2 tsp Kosher salt
- 1/2 c butter, softened
- 1 c granulated sugar
- 1/2 c light brown sugar
- 1/2 tsp pure vanilla extract
- 1 c pumpkin, canned (not pie filling)
- 1 lg egg
- 1 1/2 c white chocolate chips
