Today’s recipe, tomato-stuffed zucchini, is a healthy, gluten-free, vegetarian dish.
With people having a variety of food allergies and sensitive digestive systems, sometimes it can be difficult to please everyone’s taste buds and dietary needs, and still present a tasteful dish.
This version of tomato-stuffed zucchini is packed with flavor and yet it is still simple enough for even the beginner cook.
Technically, zucchini is out of season, but don’t let that stop you from serving up a this colorful entree.
Speaking of color, did you notice how bright the reds and greens are in the picture of the dish? Maybe you could add this recipe to your Christmas menu, and call it Christmas stuffed zucchini. I think anything with the word Christmas in it makes it more delightful and it would definitely make me want to try it. Maybe you can use that as a little trick to get the kids to try these vegetables during the holidays.
